You can use Disk Management to mount a drive as a folder on your C: drive. https://www.windowscentral.com/how-mount-hard-drive-folder-windows-10 And then you can create a junction with mklink /j for any folders you want to show-up in OneDrive from that mounted folder to the OneDrive folder. Junctions across drives didn't work for me but this method did.

2. Sign In

Click on the OneDrive icon in the Notification Area on the Taskbar.

Click on the Help & Settings icon and select Settings.

Click Add an account.

Type
douwe@shoklo-unit.comin the Email address field. -
Click Sign in.

Type your Outlook 365 password.

Click OK.

Ignore the Something went wrong error and click Done.

Click Next.

Click Start backup.

Click Next.

Click Next.

Click Next.

Click Later.

Click Open my OneDrive folder.
